Overnight French Toast

Wake up to the most delicious smell and breakfast ready to serve. This overnight French Toast gets the best texture with soft bread on the bottom and a crispy sugary topping. You will want to eat the whole pot!

  • 1 Crock Pot

Ingredients
  

  • 1 small loaf Bread can sub for Gluten Free
  • 3 Eggs
  • cup Milk Can use DF milk if desired
  • ¼ cup Maple Syrup
  • ½ Tbsp Vanilla Extract
  • ½ tsp Cinnamon
  • 2 Tbsp Butter
  • 2 Tbsp Coconut sugar or brown sugar

Instructions
 

  • The night before you want this ready, butter or oil the inside walls of a crock pot really well.
  • Cut up about 1/2-3/4 a loaf of bread into large chunks. Thicker slices of bread will work better, but you can use just about any type. Place in buttered crock pot.
  • Mix or beat together eggs, milk, vanilla, maple syrup, and cinnamon in a large bowl.
  • Pour the mixture over the bread in the crock pot. Do not fully submerge, about 3/4 of the bread will be covered.
  • Sprinkle over the top brown or coconut sugar.
  • Add slices of butter to the top.
  • Cover and set on low for 8-10 hours.
  • In the morning, scoop out to serve.
  • Top with your favorite toppings, powdered sugar, fresh fruit, whipped cream, or maple syrup.

Notes

I prep this the night before, right before bed I set my crockpot to low for 10 hours and let cook overnight.
The texture almost resembles a bread pudding or French toast casserole but the flavor is a delicious French Toast.
I like the top part nice and crispy so I only cover the bread about half - 3/4 of the bread with the egg mixture. It will absorb the liquid and still have flavor but won't get as soft.
The butter and sugar on top are optional but they help to get that caramelized crispy part that makes this dish so tasty!
