Equipment

  • 1 glass mixing bowl
  • parchment paper
  • 1 cookie sheet or medium tray
  • 1 glass cup
  • microwave or double broil set-up

Ingredients

  • 8-10 pitted Medjool dates
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil
  • 10-12 pecans or walnuts whole
  • sea salt finishing or flakey

Instructions

  • Line your area with parchment paper, dates are sticky!
  • Line a baking sheet with parchment paper
  • Make sure your dates are pitted.
  • Lightly oil the bottom of a drinking glass or other glass jar and press down on the dates to flatten out. You may need to scrape it off with a knife to keep intact carefully.
  • Once all are flattened place the whole pecans or walnuts into the center and press lightly to stick.
  • In a glass microwave-safe bowl, combine the chocolate chips with coconut oil. Heat in 30-45 second increments stirring in between until melted and smooth.
  • Place one date at a time into the chocolate, flip once, and remove with a fork letting the excess chocolate drip off.
  • Place onto the lined baking sheet.
  • Sprinkle with finishing sea salt.
  • Place in freezer for about 15-20 minutes.
  • Enjoy!

Notes

date turtle
Keep in air tight container in fridge or freezer for up to 3 weeks.
I always use Medjool dates because they have the best gooey texture and are sweeter like caramel. Other types of date will not turn out very well with this recipe.
You can use other nuts but I find these best turn out with whole pecans or walnuts and give that classic flavor.
You can omit the sea salt but I personally love the flavor contrast.
