Easy Pressure Cooker Pulled Pork

Tender and delicious fall apart pulled pork made easy in the pressure cooker.

Equipment

  • 1 Pressure Cooker InstaPot or the like
  • 1 Tongs

Ingredients
  

  • 3 lbs Pork Shoulder or Butt
  • 2 cups chicken or bone broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • ½ tsp cayenne pepper

Instructions
 

  • turn on pressure cooker to sear/sautee setting
  • cut your pork into about .5 lb pieces
  • place pieces evenly spread into the pressure cooker and allow to sear for 5 or so minutes to brown the bottom
  • flip them over using tongs or a fork and sear again for 5 minutes
  • as they are searing on the second side being adding your spices to the pot
  • once your spices are added to the pot and both sides are seared, add the broth to the pot
  • on the pressure cooker, cancel the current saute setting. Place the lid on, lock in place, and move your pressure valve to the closed position
  • change your pressure cooker setting to "meat" and set cook time to 45 minutes
  • once the cook time is completed carefully release the pressure valve - if you wait 5 to 10 minutes after the cook time is done there will be less pressure to release.
  • remove pork pieces with tongs and place them in a large glass tupperware or serving tray. Easily shred with the tongs or two forks!
  • For best results add the shredded pork to an oiled griddle or cast iron skillet on med-high heat to get it nice and crispy! About 5 minutes on each side.
  • serve with tortillas for taco night or try it on pizza!

Notes

Carefully release the pressure valve when using a pressure cooker! Wait 10 minutes after cooking time for less of a pressure release, and use a towel or oven mitt to protect yourself from the hot steam.
Store in an airtight container, up to 4 days in the fridge.
