turn on pressure cooker to sear/sautee setting
cut your pork into about .5 lb pieces
place pieces evenly spread into the pressure cooker and allow to sear for 5 or so minutes to brown the bottom
flip them over using tongs or a fork and sear again for 5 minutes
as they are searing on the second side being adding your spices to the pot
once your spices are added to the pot and both sides are seared, add the broth to the pot
on the pressure cooker, cancel the current saute setting. Place the lid on, lock in place, and move your pressure valve to the closed position
change your pressure cooker setting to "meat" and set cook time to 45 minutes
once the cook time is completed carefully release the pressure valve - if you wait 5 to 10 minutes after the cook time is done there will be less pressure to release.
remove pork pieces with tongs and place them in a large glass tupperware or serving tray. Easily shred with the tongs or two forks!
For best results add the shredded pork to an oiled griddle or cast iron skillet on med-high heat to get it nice and crispy! About 5 minutes on each side.
serve with tortillas for taco night or try it on pizza!
