Chocolate Covered Strawberry Protein Ice Cream
This protein-packed ice cream is the perfect sweet treat for Valentine's day!

For the ice cream
- 1 cup low fat cottage cheese
- ½ cup almond milk or milk of choice
- 1 serving Strawberry protein powder or 1/2 cup strawberry protein shake
- ½ cup smashed strawberries
- ¼ cup liquid egg whites
- 1 Tbsp powdered peanut butter
For the chocolate shell
- 1 tbsp coconut oil
- ¼ cup dark chocolate chips
Ice Cream
Place all ingredients into the Creami pint container and blend together with an immersion blender (or use a blender)
Place lid on the pint and put on flat surface in freezer for about 12-15 hours
Once frozen, remove from freezer and place in creami container and into the machine.
Select light ice cream and spin, repeat until you reach your desired consistency 2-3 times typically yields a creamy soft-serve texture.
Dish up
For the chocolate shell
while the ice cream is being mixed, place chocolate chips and coconut oil in a glass microwave-safe dish. Heat in 30-second increments until melted togteher.
Pour the chocolate shell onto the ice cream and allow a minute to harden!

I used the strawberry banana Core Power shake instead of protein powder and it was delicious.
