Chocolate Covered Strawberry Protein Ice Cream

Equipment

  • 1 Ninja Creami machine
  • 1 ninja creami pint
  • 1 immersion blender or regular blender

Ingredients
  

For the ice cream

  • 1 cup low fat cottage cheese
  • ½ cup almond milk or milk of choice
  • 1 serving Strawberry protein powder or 1/2 cup strawberry protein shake
  • ½ cup smashed strawberries
  • ¼ cup liquid egg whites
  • 1 Tbsp powdered peanut butter

For the chocolate shell

  • 1 tbsp coconut oil
  • ¼ cup dark chocolate chips

Instructions
 

Ice Cream

  • Place all ingredients into the Creami pint container and blend together with an immersion blender (or use a blender)
  • Place lid on the pint and put on flat surface in freezer for about 12-15 hours
  • Once frozen, remove from freezer and place in creami container and into the machine.
  • Select light ice cream and spin, repeat until you reach your desired consistency 2-3 times typically yields a creamy soft-serve texture.
  • Dish up

For the chocolate shell

  • while the ice cream is being mixed, place chocolate chips and coconut oil in a glass microwave-safe dish. Heat in 30-second increments until melted togteher.
  • Pour the chocolate shell onto the ice cream and allow a minute to harden!
  • Enjoy!

Notes

I used the strawberry banana Core Power shake instead of protein powder and it was delicious.
